You can go from Chiang Mai to the Aranyaprathet/Poipet border crossing by bus. These stop in Khorat, from there you continue by bus to the border.
You can also do this route returning to Bangkok, many agencies sell the ticket to Siem Reap.

Without a doubt the best option of all, it is the fastest and most comfortable. To go by plane to Siem Reap we will have to make a stopover in Bangkok as there are no direct flights available.

If your idea is to go by plane and it is high season try to have your tickets booked as soon as possible. The same goes for your accommodation bookings.
If you want to go by bus via Khorat, try to spend a few days in the area, the city and its surroundings are very worthwhile.
If you cross the border at Poipet, avoid the trap of getting a visa through the agencies before the immigration office. In these agencies, using any ruse, processing the visa costs twice as much as at the border itself. Once in Aranyaprathet/Poipet go straight to the immigration offices and ignore these agencies.
